Fried yam with fish sauce.

INGREDIENTS: (for 2-3 servings)

For the yam;

6 slices of yam.

Salt to taste.

Vegetable oil for frying.

For the sauce;

4 pieces of boiled fish

4 peppers and 6 tomatoes

1 small onion

2 cooking spoons of vegetable oil

1 seasoning cube

Salt to taste and 2 tomatoes for garnishing.

EQUIPMENTS: knife, cooking spoon, saucepan, frying pan, blender, plate, fork, colander, kitchen towel and a perforated spoon.
PROCEDURES:

Step 1: cut, peel, and wash the yam to remove the dirt and sand.

Now neatly cut into cubes or any other shape of your choice. In other to fry easily, wash and towel to dry out the water.

Step 2: Heat up the frying pan add the oil for frying, once it’s hot.

Season your yam with some salt and then fry on both sides till it is golden brown in color. (Note: don’t over crowd your pan when frying).

Step 3: when the yam is ready take it out of the pan using a perforated spoon, place your fried yam in a colander and then put in a microwave or oven to keep warm.

Prepare the sauce.

Step 4: prepare your ingredients; dice your onion, debone and flake the fish, blend the peppers and tomatoes and slice the tomatoes for garnishing.

Step 5: place a saucepan on heat, add 2 cooking spoons of vegetable oil, add in your diced onion.

Let it fry till its transparent and slightly brown but not burnt.

Step 6: add the blended peppers and tomatoes. Stir fry for about 3-5minutes.

Step 7: add the flaked fish and add the seasoning cube, stir, check for the seasoning and allow to cook over low heat for another 5minutes.

Step 8: remove your sauce from heat and serve with the fried yam and garnish nicely with some vegetables e.g tomatoes, parsley etc.

Don’t over fry anything.

Season moderately.

Fry evenly and don’t over crowd the pan .

Serve, arrange and make your dish colorful and attractive to the eyes.
